I Made My First Fully Vegan Meal

I always like to make a good meal on Sunday, sometimes it's more boujee than others but today I want to do a vegan bowl, it's a first for me so let's get started.

I cooked these first because I knew they would take the longest. Just on medium heat in olive oil and covered.
The bell peppers add a great flavor and also that really great bright color is a plus.
I sautéed some onions and garlic and mixed in the tofu with the peppers. I just started trying to cook with tofu and I find that it's pretty hard to season so I figured cooking it with the peppers and onions it will give some flavor.

Not pictured: I seasoned the above picture with salt & pepper, turmeric, this ginger paste from Trader Joes as well as onion and garlic powder.
I then added these chick peas and kale so it can all cook together

Then I added Thai red curry sauce (also from Trader Joes) and a can of coconut milk and let it all cook down. I mean how delicious does this look?! I let it simmer for about 10 minutes just so all the flavors could soak in.
While everything was cooking together I was cooking rice as well to put this over

And VOILA! It was soooo tasty and it made a lot so this will last me for a couple of days. This meal made me more hopeful that I can try and cook more vegan meals because I was very full and it was quite scrumptious.
